Strawberry Marinara with Fresh Ricotta

Serves 4-6


Made with Strawberry Marinara


¼ cup olive oil, plus more for drizzling

1 jar Strawberry Marinara (avail at Union Square Greenmarket only)

Sea salt

12 oz. spaghetti

¼ small sweet red onion, sliced

1 cup fresh ricotta

Freshly ground black pepper



Over medium heat, saute red onion slices 3-5 minutes. Set aside.

Cook spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente; drain pasta, reserving 1 cup pasta cooking liquid.

Add pasta to Strawberry Marinara to pasta, tossing and adding pasta cooking liquid as needed, until sauce coats pasta, about 2 minutes.

Remove from heat, drizzle with more oil, and toss to combine. Serve pasta topped with sweet red onion, ricotta and black pepper.
