Spicy Grilled Cheese with Tomato 'Nduja
1 jar Tomato 'Nduja
4 tspn mayonnaise
4 ounces sharp cheddar cheese, finely shredded (1 cup)
2 ounces cream cheese
8 slices whole-grain bread
Combine mayonnaise, cream cheese and cheddar in a medium bowl. Mix well to combine (mixture will be very thick).
Spread Tomato 'Nduja over each of 8 bread slices, then top with the cheese mixture (about 2 tablespoons). Put the sandwiches together and lightly coat the outsides with olive oil.
Heat a large skillet over medium heat. Add 1 teaspoon oil; swirl to coat. Place sandwiches in pan; cook 3 minutes or until lightly browned (do not flip). Remove sandwiches from pan. Add remaining 1 teaspoon oil; swirl to coat. Turn sandwiches over, and add to pan; cook 3 minutes or until lightly browned and cheese melts. Cut in half; serve immediately.
