Enough Protein Already!

I've been asked to send some "easier" recipes lately and not because you don't like what I've been emailing you every week, but because an easy meal to cook up is always appreciated. I gotcha! Pasta Cabonara with spicy Tomato 'Nduja it is! This is about as easy as it gets for a delicious weeknight (and quick) meal at home folks. Pasta Carbonara uses guanciale or pancetta but you can totally use bacon if you can't find the other two. Trust me, it works, I've tried it myself and...YUM!  It also either uses spaghetti or bucatini. I prefer spaghetti because I find bucatini to be slippery and messy. No thanks! My parents could never get me to eat bucatini without a frown.

The twist with this recipe is using our spicy Tomato 'Nduja for that extra umami and salami quality to an already protein-rich dish. Tomato 'Nduja pairs beautifully with pasta carbonara as with so many other dishes. It truly is an 'everything sauce.' I wrote down 2 tablespoons of spicy Tomato 'Nduja, but you can totally add 4 tablespoons instead + extra for serving (I always add more since I do prefer it spicy myself).

Don't Forget the Milk Pete!

Chickpeas are about as old as time in many Mediterranean cultures. Older than tomatoes actually. In fact, at the Metropolitan Museum, there's a framed papyrus letter from Heraclides to his brother Petechois containing a farmers market shopping list to pick up lupines, kidney beans, fenugreek and, low and behold, chickpeas! 

In Calabria and Sicily, you'll find chickpeas and chickpea flour being used with many dishes. Especially with pasta, yum! So naturally, the combination of hummus (a creamy chickpea condiment) and our spicy Tomato 'Nduja (a meatless salami spread inspired by the Mediterranean) just made total sense as a quick and easy side dish for any night at home or as a delicious dip for your next dinner party with bread, chips and cheese. Chickpeas, like tomatoes, are incredibly versatile which is why this combo works very well together. Mix it up this week and let me know your thoughts. We don't call our Tomato 'Nduja an 'everything sauce' for nothing. It literally goes with everything!

All hail Reggina! And I don’t mean the queen.

This week's recipe is inspired by Reggio Calabria. My family's section on the Italian boot that looks straight across the narrow strip of sea known as the Strait of Messina to Sicily. (Fun fact: it's also where the origin of the idiom 'having to choose between two evils' comes from. In Homer's Odyssey, Odysseus must pass between Charybdis (Sicily), a treacherous whirlpool, and Scylla (Calabria), a horrid man-eating, cliff-dwelling monster.) This is the same ancient part I'm in the process of organizing a delicious and adventurous culinary tour of in late September. Are you intrigued? Calabrians are very dramatic in the kitchen which is why their dishes are spicy and sharp and delicious. So, when I came across today's recipe; I had to adapt it to both our Ugly Sauce and spicy Tomato 'Nduja. Nutmeg and red onion are two staple ingredients in the Calabrian kitchen that you don't hear about too often here in the States. You'll see why once you cook this delish pasta dish up. SO SO GOOD!
