Tis the season to eat a helluva alotta soups guys and I'm OK with it. I used to not care for soups much as a kid, but as I've matured (in both age and palette), I've come to appreciate the versatility and practicality of soups in general. Soups come meat-based, veggie-based; hell even insect-based in some cultures (but we don't need to explore those, yet). Point is, soups come in all shapes, sizes and flavors and I'm on board with most of them. They're also great dishes that use pretty much anything we make here at the Saucery (those that call for fresh tomatoes anyway). So get out your stock pot, slow cooker, creuset pot, dutch oven, instant pot ... whatever! and simmer away.
This week’s Curry Lentil Coconut Tomato Soup recipe is very satisfying.
