Never Ever Cook Pesto!
It's late summer which means there's tons of fresh basil everywhere in my garden which also means lots and lots of pesto in my family's future. Even if you don't have a garden and love making basil pesto at home, never ever cook it. Period. The basil will actually turn black and taste very bitter if you do. Instead, make it 100% raw the way it should be. Also, if you prefer to keep it vegan, just omit the cheese and use walnuts instead as a substitute. It's absolutely delicious. Buon appetito!
