The Best Tomatoes for Canning

The best tomatoes for canning are the Plum and Roma variety. They have less water and seeds in them and store much better because of these two factors. They're also perfect for making sauce (because they have less water). Heirlooms, on the other hand, contain a lot more water and are much better for sandwiches and salads, not canning.
