Cherry tomatoes are nature's candy. So sweet. So colorful (especially when mixed with other varieties). So logically sized to just grab and pop into one's mouth (right?). It's no wonder we all can't get enough of nature's little candies. Of course, eating cherry tomatoes raw is delicious all on its own but when roasted... it's a whole new level of tomato awesomeness. The already sweet taste they have when raw only increases when roasted. Go grab a few pints from your local farmers market and roast them for a half hour this Labor Day weekend. Add it as a side to your BBQ, mix with pasta, top some bruschetta or just have them on their own (using your fingers is socially acceptable on long holiday weekends, so just go with it). Enjoy! 

Roasted Cherry Tomatoes

Serves 4


2 pints cherry tomatoes
Few sprigs of fresh thyme
Extra virgin olive oil
Sea salt


Rinse tomatoes. Add tomatoes to a large bowl and add the olive oil, sea salt and mix. Line a baking sheet with some parchment paper and add coated tomatoes. Top tomatoes with fresh thyme and roast for 20 minutes in 450º oven. Serve.
