So what'd you decide to pair with your pickled cherry tomatoes? A burger? Bruschetta? We decided to mix it in with some delicious gluten free pasta by Jovial (BTW, I highly recommend Jovial. You'll seriously forget you're eating gluten free. Otherwise, use any pasta that makes you smile). By just adding some olive oil and dried oregano (from our garden) into the mix gives this dish a depth of flavor that is simple and packed with garden freshness. The perfect pasta dish for the end of summer with just the right amount of tanginess.
Spaghetti with Pickled Tomatoes
Bring a large pot of salted water over medium heat to boil, add pasta (read package instructions to reach al dente perfection). Drain and add to a large bowl. Mix in pickled cherry tomatoes, olive oil and dried oregano and mix. Garnish with some fresh thyme and serve. Enjoy!
