...and we are drowning in tomatoes! Of course, that's exactly where we want to be this time of year here at the Saucery. The more tomatoes, all the better! In the midst of all the tomato craziness, Nonna was able to sneak away and cook up some deliciously simple and completely fresh lunch for us to enjoy. Check out the recipe: 

Garden Fresh Tomato Pasta Salad with Chickpeas  

Serves 4


2 fresh whole tomatoes (variety of your choice just not plums. Nonna found some great heirlooms in the garden today and used those.) 
1 pound of penne pasta (or pasta of your choice) 
1 can chickpeas
bunch of fresh basil
bunch of fresh oregano
bunch of fresh chives
half of 1 red onion
pinch of sea salt

extra virgin olive oil


Bring a large pot of salted water to a boil over medium heat. Meanwhile, drain can of chickpeas and wash thoroughly with cold water. Add chickpeas to a bowl, set aside. Once water's boiling, add pasta and cook till al dente (follow the instructions on your pasta package for accurate timing). Strain and run it through cold water (you want to run the cooked pasta through cold water to rid the heat). Add to chickpeas and mix, set aside. Chop fine all fresh herbs and add to bowl. Slice red onions and add to bowl. Add olive oil, salt and continue mixing until combined. Season some more if necessary. Serve. Delicious and it doesn't get any fresher than picking tomatoes from your own garden (or from your local farmers market).
